The opening paragraph is not too academic, but that doesn't matter too much in the context of assignment instructions ;) It's a good historical introduction to the subject matter and it shows you've done some extra research and investigation, although your references could be more expansive. You also encapsulate the whole philosophy and goal of Zotter chocolate very well.
